In 1928, when Herbert Hoover promised “A chicken in every pot,” he was referring to a very different bird than is available to the American consumer today. By applying the industrial model of the greatest output for the least input, the chicken of today has become a Frankenstein version of its former self. Flavorless and textureless, and unable to care for itself, the 40 billion pounds of chicken consumed in the U.S. yearly grows from day old chick to 4 pound dressed bird in just 40 days, while Hoover’s bird took 120 days for the same growth.
The French recognized the importance of keeping the genetics of its most succulent chickens pure, and instituted an Appellation d’Origine Controlee (AOC) for its famous Poulet de Bresse. Its genetics closely guarded, and its husbandry closely controlled, the French chicken has remained an ingredient fit for the center of the holiday table, and is the gold standard when judging chicken. Through the efforts of Peter Thiessen, a Canadian who spent decades breeding a chicken that very closely resembles the famous French bird, we are able to finally bring you an American chicken worthy of its name. This is a chicken we are proud to grow, restaurants can be proud to serve, and you can be proud to eat.
